It is believed that this summary of available information concerning sugar and its value as food will prove useful to housekeepers and others interested in the subject. The bulletin is similar in its general character to other farmers' bulletins on the nature and use of food materials and, like them, has been prepared under the general supervision of C. F. Langworthy, chief of nutrition investigations of the Office of Experiment Stations. In its present form this bulletin is an extension and revision of an earlier farmers' bulletin (Farmers' Bulletin 93, "Sugar as Food"), which it is designed to replace.
