The method results in the food products gradually losing water, but without giving up their color or avor or having their cellular structure impaired. Accordingly, the dehydrated food will reabsorb water, swelling up to its normal size and appearance. \vhen cooked it will have the same appearance, avor and odor of freshly cooked material made from fresh vegetables.
